Baby Meatballs with Broccolini and Pasta

Preparation: 20 minutes 

Cooking: 15 minutes 

Serves: 4 

Ingredients:

600g lean beef or lamb mince
1 small onion, grated
2 cloves garlic, crushed
1 egg, lightly beaten
1/3 cup dried breadcrumbs
3 tsp lemon zest, grated
1 tbsp olive oil
20 cherry tomatoes
400g dried pasta
2 bunches broccolini, cut into bite-sized pieces
2 tbsp olive oil
¼ cup lemon juice
Ground pepper to taste

 Method:

  • Combine mince, onion, garlic, egg, breadcrumbs and lemon zest in a large bowl.  Season with black pepper.
  • Using your hands, form into 2cm balls.
  • Heat a non-stick frypan and add the oil.  Cook meatballs until golden and cooked through.
  • Cook the pasta, adding the broccolini in the last few minutes of cooking.
  • Drain and return the saucepan with the olive oil, lemon juice, cherry tomatoes and meatballs.  Stir and season to taste. Serve. FM
