Chicken & Leek Filo Pie

Ingredients

500g chicken thigh fillets, chunky diced
2 leeks, washed and sliced
1 x 40g sachet McCormick One Pot™ Chicken and Leek Casserole
1½ cups water
2 tbsp cream
4 spring onions, sliced
6 sheets filo pastry
25g melted butter

Method

  • Brown chicken and leeks in a hot heavy based casserole dish*.
  • Add water and McCormick One Pot™ Chicken and Leek Casserole recipe base and simmer gently for 20 minutes.
  • Stir through the cream and spring onions.
  • Brush each sheet of filo pastry with melted butter and scrunch loosely on top of the chicken mixture. Alternatively, place the mixture into small ramekins with scrunched filo on top. 
  • Place in a pre-heated 220°C. aa fm tag square 15.jpg
