Mixed Bean Salad with Coriander, Mint and Lemon Grass

Ingredients

2 x 400g tins mixed beans, rinsed and drained
150g baby spinach leaves or other green leaves
1 small red onion, thinly sliced
1 clove garlic, crushed
Handful each of chopped mint and coriander
1 tbsp thinly sliced lemon grass
2 tbsp Tamari (low sodium, wheat free soy sauce)
2 tbsp sesame oil
2 tbsp sweet chilli sauce
Grated rind and juice of 1 lime
1 tsp honey
2 red chillies, seeded and thinly sliced (optional)

Method

  • Combine beans, spinach and onion in a large bowl.
  • Mix garlic, herbs and spices in a jar and mix well.
  • Drizzle dressing over salad and combine well. Sprinkle with chopped chillis and serve.
