Oven Baked Chicken with Garlic + Parmesan

Oven Baked Chicken with Garlic and Parmesan

Serves 4

INGREDIENTS

8 legs of chicken
4 cloves garlic, crushed
3 eggs
2 tbsp parsley, chopped
50g breadcrumbs
40g Parmesan, grated
4 tbsp olive oil

METHOD

  • Arrange chicken in baking dish
  • Put eggs, garlic and ground pepper into a bowl, whisk well and pour over chicken
  • Cover and chill for 4 hours – turning chicken over half way
  • Heat oven to 180ºC and place a roasting dish with oil in to preheat
  • Combine breadcrumbs and parmesan plus parsley and seasoning
  • Remove chicken from fridge and one by one, put in the crumb mixture, patting on well
  • Place chicken in heated roasting dish for 15-20 minutes
  • Turn chicken over and cook for another 15-20 minutes
