Pork meatballs with fruit sauce

Makes 16

Ingredients

400g Lean Pork mince
2 spring onions, finely chopped
30g salami, finely chopped
1 tbs fresh herbs eg: parsley, chives
100g cubed cheese – ideally Swiss or mozzarella
1 egg, beaten
a quarter cup water
200g breadcrumbs or crushed breakfast cereal
Olive oil spray
Plum or apple sauce

Method

  • Pre-heat oven to 200°C.
  • Combine mince, spring onions, salami and seasoning in large bowl.  Mix well.
  • Form mixture into walnut sized meatballs and push a cube of cheese into the centre of each ball.  Roll to enclose.
  • Whisk together egg and water.  Dip each meatball into the egg mixture, then roll in crumbs, coating well.
  • Place meatballs on baking tray, spray with olive oil spray, bake for 10 minutes in oven.
