Apple + Blue Cheese Bread

Makes approximately 8 slices


225 self raising white flour
1/2 tsp ground black pepper
25 mls olive oil
1 crisp eating apple (about 125g), chopped
125g blue cheese, coarsely grated or crumbled
50g almonds, roughly chopped
1 egg
60-75 mls milk


  • Heat oven to 190C/375F/gas 5.
  • Mix the flour and pepper together in a large bowl.
  • Stir in the apple, cheese and chopped almonds and make a well in the centre.
  • Whisk together the egg, olive oil and milk, pour into the well and mix into a soft dough.
  • Place dough on a lightly floured surface and knead quickly into a small round.
  • Make some shallow slices on top and pop in the oven for 40 minutes or until well risen and golden brown.
