Basic Pancake Recipe

Ingredients

1 cup plain flour
1 egg
1 1/3 cups milk
pinch of salt

Method 

  • Sift flour and salt into a mixing bowl.
  • Create a well in the centre and break in the egg.
  • Slowly add the milk on top of the egg while using a whisk to mix in the flour gradually from the sides to the centre of the bowl in a circular motion. Continue until all the milk is finished and no flour remains.
  • Leave mixture to sit for up to an hour. 
  • Heat up a frypan (a dedicated pancake pan is ideal) to a medium heat.
  • Add a little butter and swirl pan around to cover. Remove any excess with a paper towel.
  • Pour a 1/2 cup or so mixture into the pan and wait until bubbles appear.
  • Turn over and cook the other side.
  • Repeat until mixture finished. 
  • Keep stack of pancakes warm in a low oven or cook, serve and eat as you go!

Enjoy with lemon and sugar or bananas with maple syrup.
