Chocolate + Cranberry Brownies

Chocolate + Cranberry Brownies

Preparation: 15 minutes
Cooking: 30 minutes
Makes: 24 pieces


125g dark chocolate
125g butter
4 eggs
1 cup caster sugar
1 tsp vanilla extract
¾ cup plain flour
1½ tbsp cocoa
½ cup dried cranberries


  • Preheat oven to 160°C.  Grease and line a 20cm x 30cm tin.  Melt chocolate and butter in a microwave on medium power at 30-second intervals, stirring until smooth.  Cool.
  • Beat eggs, sugar and vanilla for 1-2 minutes or until creamy and smooth.  Beat in chocolate mixture, sifted flour and cocoa.  Spread in tin and sprinkle cranberries on top.
  • Bake for 25-30 minutes or until crusty.  Cool in tin then cut into squares to serve.  Dust with icing sugar and serve with cream, if desired.

Tip: Take care not to over-beat or over-cook the brownie or it will become too ‘cakey’.  It should remain very moist in the centre.
