Hearty Bean and Potato Pie

Hearty Bean and Potato Pie

Preparation: 15 minutes
Cooking: 45 minutes
Serves 4


1 tblspn olive oil
1 onion, chopped
2 cloves garlic, crushed
300g mushrooms, sliced
4 large ripe tomatoes, diced
1 cup tomato puree
2 tblspn chopped fresh basil
2 tspn Worcestershire sauce
2 cups pre-cooked lima beans
3 cups mashed Royal Blue potato
1/3 cup grated Parmesan cheese (omit for a VEGAN option)


  • Heat oil in pan.
  • Add onion, garlic and mushrooms.  Cook, stirring until onion is soft.
  • Add tomatoes, puree, basil and sauce.  Simmer, uncovered, for about 10 minutes or until vegetables are tender.
  • Stir in beans.  Mix well. 
  • Spoon mixture into ovenproof dish and cover with mashed potato.  Top with Parmesan cheese. (omit cheese for a vegan option)
  • Bake in moderate oven (180°C) for 20 minutes or until topping is golden.
