French Toast with Smoked Salmon and Lemon, Dill Crème Fraiche

4 thick slices of soft white bread
250gms smoked salmon
150gms crème fraiche
1 dessert spoon of chopped dill
5 chopped chives
10 chopped capers
1 teaspoon lemon rind

Egg mix

2 Eggs
1 cup of milk
Sea salt and pepper
Butter for frying


  • Mix together crème fraiche, dill, chives, capers and lemon rind.
  • Make a salmon and crème fraiche sandwich.
  • Whisk together eggs, milk, salt and pepper.
  • Heat butter in heavy based non stick pan 
  • Dip sandwiches in egg mix, coating both sides.
  • Fry each side on low heat until golden brown.
  • Finish in hot oven for 5 minutes to make sure it is heated all the way through and the fraiche is warm and soft.

Serve with some thinly sliced cucumber to refresh the palate.
