Flourless Chocolate Cake

FLOURLESS CHOCOLATE CAKE

INGREDIENTS:

250g dark bitter chocolate
150g castor sugar
150g butter
100g ground almonds
5 large eggs, separated
icing sugar and berries for serving

METHOD:

  • Melt the chocolate, butter and sugar in a bowl sittting in a pot of simmering water.
  • Remove from heat and stir well.Stir in the almonds and then the egg yolks.
  • Beat the egg whites until stiff but not dry.
  • Stir in a few spoonfuls of egg white into chocolate mix to lighten it and then stir in the rest.
  • Turn into a lined 20cm round cake tin.
  • Bake in a 180oC oven for 40-50 minutes.
  • Cool in tin.
  • Remove from tin and dust with icing sugar.

For a dessert serve with berries and cream or ice cream.
