Moroccan Chicken and Brown Rice Pilaf

Prep time:           15 minutes
Cooking time:     4 hours
Serves:                6

Ingredients

500g chicken thigh fillet, diced

1 large onion, diced
1 x 40g sachet McCormick Slow Cookers Moroccan Lamb Casserole
2 cups brown rice
2 ½ cups (625ml) water
2 cups carrot, grated
½ cup mint or parsley, chopped
Natural yoghurt to serve

Method 

  • Brown chicken and onion then add to the slow cooker insert pot.
  • Mix McCormick Slow Cookers Moroccan Lamb Casserole recipe base with the rice and water then pour over chicken.
  • Cover and cook for 4 hours on HIGH. (Keep covered during cooking. Cooking times may vary between slow cooker models).
    Stir in the grated carrot and herbs.
