Poached Chicken with Crushed Potatoes
This delicious looking and easy recipe uses the new McCormick Slow Cookers which can be found at your local supermarket.
Preparation time: approx 15 minutes
Cooking Time: 3 hours
Serves: 6 - 8 (or freeze leftovers for work lunches and dinner)
Ingredients:
1.5 kg whole chicken, neck and excess skin removed
40g butter, softened
1 x 40g sachet McCormick Slow Cookers Chicken Bacon and Potato
2 onions, halved
6 potatoes, quartered lengthways
1 tbsp (20ml) water
Chopped fresh chives to serve
Method:
Gently place your hand between the breast meat and skin of the chicken, forming a pocket over the breast bone. Combine the softened butter with half of the McCormick Slow Cookers Chicken Bacon and Potato recipe base sachet contents, and gently push into this pocket, so it evenly coats the breast under the skin.
Place the onions inside the chicken cavity. Place the potato halves on the base of your slow cooker insert pot, and top with the stuffed chicken. Combine the remaining sachet contents with water to form a paste and rub over chicken.
Cook for 3 hours on high or 6 hours on low. (Keep covered during cooking). Cooking times may vary between slow cooker models.
Remove potatoes and chicken from pot and roughly mash potatoes. Serve poached chicken thickly sliced with onion and crushed potatoes. Sprinkle with chives to serve.
